Let your attitude change your life

Your attitude is a product of your thought life. People can see how you think when they observe your attitude. If we have a positive attitude, we will have a good life regardless of our circumstances; if we have a negative attitude, we will not enjoy life, no matter how good it is.

Your attitude belongs to you, and nobody can make you have a bad one if you don’t want to. Likewise, no one can make you have a good one if you don’t want to. It is easy to have a good attitude when everything is going our way, but it is important to learn as Paul did, how to be content, whether we are abased or abounding.(Philippians 4:11-12). If the devil knows he can manipulate our attitude with circumstances, he will do so, and our emotions will always be up and down like a yo-yo.

The mental posture you take toward unpleasant circumstances determines whether or not you can enjoy your life while God is solving your problems. You don’t have to be miserable because you have a problem. As a matter of fact, as Christians, we are privileged to have the joy of the Lord and the peace that passes understanding regardless of our circumstances. Decide right now that you will have an “up” attitude so you can have an above-average life.

Let this same attitude and purpose and mind be in you which was in Christ Jesus. Philippians 2:5

Rest in Peace Joel

It is with deep sadness that I share the news of the passing of our colleague and friend, Joel Garcia, who passed away last night. This is a profound loss for all of us, and our thoughts are with his family, friends, and loved ones during this incredibly difficult time.

Joel was a valued member of our team as the company tow truck driver. We know this news is heartbreaking and may be difficult to process. 

We will share details about any memorial services or ways to support the family as they become available.

Egg, Spinach, and Feta Muffins

Makes 10 muffins.

Use these addictive, kid-friendly muffins as a warm-up to the main course or as part of a buffet. These contain no flour at all—just a lovely selection of chopped vegetables in an egg batter, topped with feta, caramelized onions and walnuts. From “Love Gluten Free” by Megan McKenna (Hamlyn, 2025).

  • Olive oil, for greasing and frying
  • 8 eggs
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon sea salt flakes, plus extra for seasoning
  • 1 teaspoon. freshly ground black pepper, plus extra for seasoning
  • 1/2 cup (1 ounce) fresh spinach, finely chopped
  • 2 large tomatoes, finely chopped
  • 1/2 cup (3 1/2 ounces) feta cheese, crumbled
  • 1 red onion, thinly sliced
  • 2 teaspoons brown sugar
  • 2 tablespoons crushed walnuts

Preheat oven to 350 degrees F. Grease 10 holes of a muffin tin.

Break eggs into a bowl, add the garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper, then whisk together. Stir in the spinach and tomatoes.

Spoon the egg mixture into the prepared muffin tin and sprinkle the feta on top. Bake for 10 minutes.

Meanwhile, drizzle olive oil into a small frying pan over medium heat. When hot, fry onion for a few minutes, until translucent. Lower the heat, then add the brown sugar and season with extra salt and pepper. Allow to cook gently for about 10 minutes, until caramelized.

When muffins are done, remove them from the tin. Spoon a little caramelized onion and some crushed walnuts on top of each one and serve immediately.

Best Rice Krispie Treats

Cook Time: 20 Minutes Total Time: 20 Minutes, plus one hour to cool

Makes 20 to 24 squares

  • 12 tablespoons (1 1/2 sticks) unsalted butter, plus more for greasing the pan
  • Two 10-ounce bags mini marshmallows, divided
  • 3/4 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 8 1/2 cups Rice Krispies or crispy rice cereal (see note)

Line a 9-by-13-inch pan with heavy duty aluminum foil and lightly grease with softened butter. Set aside 2 cups of the marshmallows.

In a large pot or Dutch oven, preferably with a light bottom so you can monitor the color, melt the butter over medium heat (save the butter wrappers; you’ll use them later for pressing the mixture into the pan). Swirl the pan occasionally to be sure the butter is cooking evenly.

As the butter melts, it will begin to bubble and foam, and the color will progress from bright yellow to golden to, finally, a toasty-brown. Once you smell that nutty brown butter aroma, take the pan off the heat. (You’ll see little bits of golden brown sediment forming; that’s okay. However, if the sediment looks almost black, go ahead and pass the butter through a fine sieve to strain it out, then return the brown butter to the pan.)

Off the heat, add the remaining marshmallows, vanilla, and salt.

Place the pot back over medium heat and stir the mixture with a wooden spoon until the marshmallows are completely melted. Remove the pan from the heat and add the cereal. Using a rubber spatula or wooden spoon, stir until evenly combined.

Add the reserved marshmallows and stir until they are softened and partially melted. Don’t overmix; you want pockets of goo. Transfer the mixture to the prepared pan and, using the butter wrapper or damp fingers, press the mixture gently into an even layer in the prepared baking pan. Let cool at room temperature for at least an hour.

Use the foil overhang to lift the treats onto a cutting board, then use a serrated bread knife to cut into squares. Store in an airtight container at room temperature for up to 5 days.

Tips to ManageYour Seasonal Allergies

Is your spring fun being interrupted by your runny nose and itchy
eyes? Here are some tips to keep your allergy symptoms under
control:


Cut back on sticky hair products. Believe it or not, sticky hair
products can trap pollen, making your symptoms worse
throughout the day.


Use eucalyptus oil. Eucalyptus oil opens lungs and clears sinuses to
relieve allergy symptoms. Use it in spray form to spritz around your
room or add a few drops of oil to a diffuser.


Add a dose of vitamin C. Fighting off allergy symptoms requires a
top-notch immune system. Eating more vitamin C can help give it
a boost. Increase your vitamin C intake by squeezing some fresh
lemon juice in your water or adding sliced citrus to your salad.


Shower at night, not just in the morning. Skipping a night shower
could mean going to bed with pollen you’ve picked up throughout
the day, which could lead to a flare up.


Try a sinus rinse. A simple nasal saline wash can quickly loosen
mucus, clear sinuses, and eliminate allergens.

WHEN IT’S YOUR MONEY, DON’T BE SO FAST TO MOVE IT. The FBI is warning of a growing scam called “the Phantom Hacker.” According to Forbes, it begins with a pop-up ad or phishing email urging the victim to call a number about a supposed “account infiltration.” Victims are pressured to quickly move their money to “protect” it, but the transferred funds go directly to the scammer. And once the money is gone, recovery is unlikely.

Their advice: Never install an app at the direction of someone claiming to be tech support, and remember, banks will never ask for security credentials over the phone.
